Dinner "out of nothing"

Last night my cousin was planning on having her sister bring Chinese for dinner. Since my aunt and uncle are visiting, and my sister and her husband were there when we were placing our orders, we planned on a big family dinner.

Her sister called late in the day and said that she was sick and couldn't do it. So I stepped in and said, "Let's have a leftover night!" I didn't get too much protest, so I warmed up some leftover pork roast and vegetables, made mashed potatoes, salad, glazed carrots and deviled eggs, and laid them all out buffet style. They were AMAZED!! They couldn't get over what a good dinner I had made "out of nothing." They are not used to making do.

My cousin even said I should write a book about using up leftovers. Poor dear, she doesn't know it's been done and done and done. This is all new to her. It gave me a chuckle. Maybe now she will be more willing to let me help with the grocery budget!

    We do that all the time. I set it all out and everyone just fixes their own plate. We call it "buffet night". Smile

    Because of our busy schedules, we used to have a buffet night on Friday. We ate any leftovers from the week. My kids loved it and there would be so much to pick from.

    I also used to take any leftover vegetables, throw them in a bag and freeze. I would just add to the bag as left-overs were available. What a great way to make soup or a beef casserole.

    You are so right about people not knowing how to make do today.

    We called it "Refigerator Surprize" and did it on Sunday nights. Then the frig was clean for the new week.

    i do that sometimes too, though its only me and my boyfriend so it helps to have only two mouths to feed! for awhile i just did not want to go grocery shopping, so we made do with what was in our pantry and fridge for about a month, which is great considering i usually go shopping every week!
