Pay Day!

Not too exciting, since it is mostly going to bills, but it will be good to have them paid and have a clean slate for next month.

Since daily reporting of my projected meals for the day is helping me to stay on track, I'll offer today's menu:

Breakfast: Banana nut muffin, coffee
Lunch: Cottage cheese, green pepper slices, granola bars
Dinner: One-half sauteed chicken breast, sourdough-onion dressing, baked cauliflower

I didn't do the baked cauliflower last night, obviously. Instead I had roasted asparagus along with the chicken and mushrooms.

I have to say for someone who doesn't like vegetables, I'm actually enjoying them. Maybe there's hope for me after all.

I'm having an "end of year" feeling -- so many around me are wrapping up the school year, going on vacation, or going on to other things. But here in the offices, we just keep going. In fact, next month will be our busy time, as we try to reach our fiscal year-end goal and process the influx of gifts. So even while I'm kind of letting go, I should be bearing down. A funny feeling. The warm weather is beckoning and not helping any!

    Terrific that you are staying with your plan for breakfast, snack and bagged lunch. Can we help you you find some veggies that you like? There are so many to choose and so many ways to prepare veggies. Many are enjoyable raw. Can you define what you dislike? Perhaps root veggies or leafy green or beans? Is it color or texture or bad memories? Would you consider V8 type drinks? Beet juice mixed with apple juice bit of ginger is terrific; adding an ice cube in a power blender creates a smoothy. Pouring into Popsicle mold results in a wonderfully refreshing treat.

    There are several different types of mushrooms and you might have fun trying out which you like and which you'd rather not try again. I keep buying different colored capsicum [sweet peppers] just because they look interesting.

    I'm a vegetarian, so I love lots of veggies. The exceptions: Onions and Peppers. Just can't get a taste for them. Smile But your baked cauliflower sounds great! Glad you are coming around to the green side.

    My friends laugh at how much I love veggies--beets, spinach, I love it all. Hummus and baby carrots have become my snack of choice.

    I just really don't think they taste very good. If they really did, wouldn't McDonald's be selling them at a premium? Smile
    But I do understand their nutritional value and the importance of eating them and I will continue to find ways to work them into my diet.
