Checking In

My cold is so much worse today. I went in to work but felt terrible and left after four hours.

Yesterday I went out just once -- to the local Jewel to pick up MyMixx freebies. I got $12.76 worth of food for free! That included some mozzarella and pepperoni sticks, two juices and a box of red pepper quinoa.

The snow was coming down hard, and this morning it was all crusted on my car, but I got it scraped. The roads were nice and clear but the traffic was slow anyway.

Today I bought a scone and coffee at work - $4. I just needed the comfort and distraction more than anything else.

I did quite a bit of cooking yesterday -- made lasagna, potato soup, and beef stroganoff.

I am waiting to hear something about my DIL's mom...

    If you have a betty crocker cookbook (everyone has one of those right?) check out their scones. They are super yummy and easy...and they freeze well - either the uncooked dough or the cooked scone. I make a double batch, freeze 1/2 the dough (w/o the cranberries or whatever I'm adding as an extra), make the other half and bring them into work. I then put all but 5 in the freezer, eat my 1 and put the other 4 in the fridge. From the fridge, I either eat them cold, or nuke 'em for 12secs in the microwave. The next week, I pull out a batch from the freezer, or I'll pull out a couple the night before to defrost on a day by day basis. (I just now have to label the crap out of my freezer stash because they keep disappearing...I've started tripling the batch and have a share-zies bag for others at the office, haha) But definitely cheaper than purchasing!

    Thanks, JP, I do have a Betty Crocker cookbook, and I'll look up the recipe. And thanks for for good wishes -- I do feel a bit better this morning.
